If you’re a regular reader, thank you for being patient with me these past few days! I was so busy that I didn’t have a chance to schedule any posts before my most recent trip; hence eyechow’s radio silence as of late. My cousin got married last Friday in Minnesota, so for six sweet days Kiyo and I were completely out of touch with work, schedules, emails, etc.
This breakfast is what Grandma made me the morning after the wedding (bless her!) – pancakes, fried eggs, breakfast sausages and fresh strawberries, all served with maple syrup. My hangover didn’t stand a chance!
The wedding was wonderful and involved lots of great food (I know, unexpected for a wedding… that post to come later) and dancing (as you can in this picture). The weekend was full of relaxing family time, but we also fit in a trip to the Mall of America; a visit to Unique, the best thrift store ever; farm-to-table brunch; a bike ride around historic downtown Minneapolis; watching the USA World Cup game; and SO MUCH EATING. I mean really, we ate so much. We also baked so many cookies and cheesy rolls with Grandma that we basically stocked her entire freezer, and my cousin’s, and still had enough left to carry an entire bag of them back with us on the plane.
Last night, back in New York, to recover from our heavy (and delicious!) long weekend of eating, I was compelled to make an organic, extra-veggie-loaded coconut curry (shallots, onions, carrots, parsnips, bamboo shoots and red, yellow and orange bell peppers) served over a mix of lentils and quinoa… but of course that was then followed by two of aforementioned chocolate chip cookies. Let’s just say I’m still in a bit of a sugar-induced state of bliss / denial that we’re back. We had an amazing time and can’t wait for more shenanigans next time!
