Happy midweek, everyone! Here’s what my Monday looked like:
Breakfast: a whole, freshly picked mango from the backyard (I eat one almost every day lately) and coffee with my homemade almond milk (tastes SO MUCH BETTER than the store-bought version!) and homemade ice cubes (water, cocoa powder, agave).
Run: I ran a mile and a half round-trip from my house to the entrance to Diamond Head State Monument.
Snack #1: I had my first snack at 9 am as I headed out to work: a handful of Kona coffee coated macadamia nuts. These are addictive!
Lunch: Kiyo and I bought an olive baguette at the farmers’ market this weekend. I put a hunk of blue cheese in part of it and called it a sandwich; simple but delicious. I enjoyed the sandwich with a side of cherries. They might be my favorite fruit, right after mango!
Snack #2: I treated myself in the afternoon to a chocolate chip cookie from Coffee Talk, which is right across the street from where I work on Mondays.
Snack #3: after work, around 5:15, I had an apple banana (you can’t really tell here but they’re so tiny!) and a weird little “bar” I got as a free sample at Costco. It was basically just peanut butter smashed together.
Yoga: I practiced some handstands in the yard and my dad came over to pick some mangos. He took this neat picture of me under the mango tree. Later in the evening I did about half an hour of practice on my mat.
Dinner: Kiyo and I made bowls of brown rice for dinner. I mixed in the almond meal leftover from making almond milk. We topped the rice with boiled (frozen) asparagus, pickled daikon (Kiyo pickled it himself awhile ago), two slices of peppered bacon each, hot sauce and soy sauce. I added an egg; it was supposed to be soft-boiled but I guess I left it in too long!
I also enjoyed a glass of Kiyo’s homemade lemon kombucha… how lucky am I with this guy around? ;) (featuring my cat, Holly, chilling with us on the couch)
Dessert: Between the fruit and the cookie, I had definitely already eaten too much sugar for one day. But as you know, I am a sucker for chocolate, especially after dinner. I enjoyed a square of almond toffee dark chocolate while I read up on yoga.
