I’m finally organized enough to be back to posting regularly on eyechow – yay! Here’s my first WIAW in a while.
For breakfast I had coffee with milk & a smoothie I made of water, prickly pear extract, frozen kale, frozen mixed berries, acai berry powder & ice. After that I went to an hour-long, level 2 heated vinyasa yoga class at Core Power Yoga.
I showered at the studio & made my usual post-yoga stop (when I practice near ward): Blue Tree Cafe. I got a chai smoothie (yes, second smoothie of the day & it wasn’t even 9 am!) made with espresso, banana, chai, cinnamon, sea salt and organic 2% milk. YUM.
Snacks at work were three of my homemade, vegan cookie dough bites (I got the idea on instagram). They’re made with just oat flour, peanut butter, mini vegan chocolate chips, milk of choice and a bit of agave syrup.
When I got my smoothie, I also picked out a vegan zucchini bread muffin, on a whim. I loved that it incorporated raisins!
However, I wasn’t a fan of the cashew frosting; it was too sweet, and I just don’t love cashew nuts.
I also had a Babybel light (thank god, finally something savory!)
Right after work I was starving, so I had to have a pre-dinner snack. I food-processed cauliflower, broccoli, a slice of Ezekial bread, and cheddar cheese and then scrambled it all with eggs. Sounds and looks weird, but with Tabasco and ketchup, tastes good! Next time I think I’d leave out the bread, though.
After eating, I relaxed with a glass of red wine (the boxed kind from Costco, which is actually really good!) and painted my nails.
An hour or two later, dinner was ready: brown rice and kimchi with lentil and vegetable stew. We used onion, bell peppers and carrots. Yum!
For dessert, Kiyo and I split a dark chocolate Mars Bar that I brought back from Australia. It was so good! I definitely ate too much sugar this day… I want to start cutting back for sure.
