This summer, I lived with Maggie and her parents at their home in North Stonington, Connecticut, while the two of us were in Yoga Teacher Training. Maggie’s mom cooked us so many delicious, homemade dinners! Above is a dish Maggie, Chelsea and I made: pesto pasta made with fresh basil from the garden. We also made a version of the pesto with avocado, which was really good.
We had a salad along with the pesto pasta.
Another night we grilled burgers; Maggie’s family only uses the grill (no stove or oven) during the summer.
One night we helped Maggie’s mom make an amazing pasta salad with fresh herbs, zucchini and yellow squash from the garden, as well as ham, peppers, mozzarella and parmesan cheese.

Maggie’s mom made us lots of great salads; here’s a cobb salad.
Maggie and I made ourselves a really good dinner one night, again with fresh herbs, zucchini and yellow squash from the garden. We sautéed it all with onions, garlic and olive oil.
We poured eggs over the veggies and covered it all with cheese, to make a wonderful frittata.
This was really delicious… and healthy, until we smothered it in ketchup and ranch!
Maggie’s mom made really good salads, as I mentioned. This included chicken salads, such as this Asian-style one with almonds, carrots, celery and sesame oil.
Maggie and I made ourselves a salad one night with leftover roasted chicken and veggies.
We ate Mexican a few times; here is a burrito with chicken, bell peppers, cheese, sour cream, guacamole, salsa and tomatoes.
It was great what a variety of meals we had! Here’s some steak, salad and potato salad.
This was one of my favorites: couscous, chard sautéed with bacon and garlic, and tofu and roasted veggies.
Here’s just some simple steamed broccoli, cauliflower and peppers over mixed greens.
Here’s a wrap Maggie and I made (this was actually for lunch one day): tortilla with hummus, homemade pesto, chicken, yellow squash, cherry tomatoes, cheddar cheese and roasted carrots.
Here’s another great homemade burger, with a really good salad made, of course, by Maggie’s mom: edamame, corn, cherry tomatoes and fresh cilantro from the garden, dressed with lime juice and olive oil.
One of last dinners was my favorite. Kiyo came to visit and brought my grandma’s cheese bread we brought back from Minneapolis. Maggie’s mom made an amazing curried chicken salad and roasted sweet potato and onions.
We had a bunch of different pickles and potato chips.
We even had salad and potato salad.
Here’s just one dessert (most nights we didn’t have dessert, or we just had a bite of Nutella: shortcake with peaches and blackberries. Maggie and I whipped some fresh cream, my favorite part!
I was so spoiled this summer :)
