Welcome to a weekend edition of What I Ate Wednesday, hosted by Peas & Crayons. This is what my Sunday looked like:
Breakfast: my usual, a green smoothie! This one packed a whole lot of organic ingredients in:
- .5 cup pure & unsweetened (not from concentrate) blueberry juice
- .5 cup water
- 1 celery rib
- .5 banana
- .3 cup frozen spinach
- .25 cup frozen blackberries
- fresh squeezed lemon juice (about half a lemon)
- 1 scoop wheat grass powder
- 1 tsp. chia seeds (sprinkled on top)

Snack #1: Since our smoothie was so low-cal, we were hungry again soon. We shared a small plate of Flathau’s Fine Foods chipotle cheese straws and Nueske’s Applewood Smoked Landjaeger Sausages, both of which came in Mary’s Secret Ingredients Spring 2014 box.
I also had a cup of detox tea.
It was really nice out, so Kiyo and I walked a mile down to Socrates’ Sculpture Park to see the new installations. All the new pieces are huge; in fact, there are only three, since they’re so large.
Lunch: By 1 PM, we were starving again so we walked the mile back and decided to try the Thai brunch at Leng Thai. For $20, you get a brunch entrée and your choice of three beverages. I had a coffee and two pomegranate mimosa (I actually asked if I could order a brunch entrée without the drinks and they said yes, but it’d still be $20, which is ridiculous, so I just ordered all three beverages). It was nice being able to sit outside in a t-shirt and shorts! You can even see the blue sky and trees reflected in my coffee.
My entrée was KHAO PAD SAI KROK E-SARN: spicy fried rice with North Eastern Thai pork sausage and fried egg. The shallots with the spicy sweet sausage was wonderful, and I loved breaking the egg over the rice. I sprinkled the lemon on the cucumber and tomato on the side. Since I had three beverages to finish, I couldn’t eat this whole plate and we took home leftovers.
Snack #2: After dropping the leftovers at home, I went for a quick 3-mile run. It was so difficult running outside in the afternoon heat! I’m definitely not used to it after this long winter. I came home to grab some Ultima Grape water (like gatorade) before heading out to my 75-minute vinyasa yoga class.
Dinner: I called Kiyo on my walk home from yoga, since I was already starving, and asked him to heat up our leftovers from Saturday night’s homemade dinner: mashed sweet potato (made with skim milk, butter, salt and pepper), steak (brined with another product that came in Mary’s Secret Ingredients Spring 2014 box) and veggies, sautéed in olive oil and spices: shallots, celery, peas, asparagus and Tuscan kale. We split the pan above, and I only had one small piece of steak, so I ate my Thai leftovers from brunch too.
Snack # : Not sure what is wrong with me, but I was still super hungry after all the leftovers, so I had half a cup of skim milk with dark chocolate syrup and snacked on a handful of walnuts.
Dessert: Kiyo and I decided to make a vegan, gluten-free mango strawberry lime crumble I found on Oh She Glows.
It was fun to make and turned out so well!
We ate it with coconut milk dairy-free vanilla ice cream and salty caramel sauce. The crumble was made with maple syrup, oats, walnuts, coconut oil and coconut flakes, so this ice cream was the perfect complement.
It was SO delicious, I highly recommend trying out the recipe if you have time!
